Flourless Banana Bread Bars

      I have been craving banana bread lately. My mom's recipe is my absolute favorite and although I've made it successfully with gluten free flour many times it has a lot of ingredients in it I can't have right now. I decided to experiment with ingredients I can have and make a bar that would fulfill my banana bread craving, but still be okay for me to eat! This recipe is acid watcher friendly but even if you don't have a restricted diet it is a great bar to start the day with or to snack on!



Flourless Banana Bread Bars

Ingredients 

* 1 very ripe large banana mashed ( mine equaled about 1/2 cup mashed)
* 1 egg
* 3/4 cup natural oil free peanut butter (you can use creamy or crunchy, I like crunchy!)
* 1/4 cup pure maple syrup
* 1/4 tsp sea salt
* 1/2 tsp baking soda

Directions

1) Pre-heat oven to 350

2) Line an 8x8 glass baking dish with parchment paper and set aside

3) In a medium sized bowl mash the banana very well

4) Crack the egg into the bowl and use a fork to mix the banana and egg together until well combined

5) Add the 3/4 cup peanut butter, 1/4 cup maple syrup, 1/4 tsp salt, and 1/2 tsp baking soda

6) Stir until all ingredients are incorporated

7) Pour the mixture into the lined 8X8 baking dish and use a spatula to spread into an even layer

8) Bake at 350 for 18 minutes or until top is slightly browned and firm

9) Allow bars to cool completely before cutting so they don't crumble

ENJOY!

Store covered in the fridge for up to 5 days.
